This style of tea service is called Gongfu (Kung Fu), which is used to describe tea preparation and service with small teapot and tea tray, often for oolong or pu-erh teas. This video demonstrates a unique tea-serving performance. It is in fact this performance that gets tea drinkers so excited to order Ba Bao Cha in restaurants in China. The last pose in the dance is traditionally called Dragon Asking for Directions–as the teapot finally distributes the hot water into the cup at the customer’s table, which is holding the Babaocha.
